Correct tea making procedure

The Correct Order for tea making is:

1. Brew tea in 'just boiled' fresh water

2. Add milk

Never add milk before water. Never add suger!

    I second this but suger is required.

    NEVER MILK BEFORE WATER!

    Also the new person always makes tea the longer you work somewhere the less you are required to make tea.

    suger may be replaced with honey.
    and always drink from a nice cup, preferably small and with no handles. go figure out why!

    Yep, sugar is required! But how about some nice rough brown unprocessed sugar instead of your regular stuff.

    Also, loose-leaf tea made in a pot is best!

    As for adding milk to the tea after it is poured, the RSC issues a stern scientific warning against the practice. It seems that dribbling a stream of milk into hot water makes "denaturation of milk proteins" more likely. And who would want that?

    "At high temperatures, milk proteins - which are normally all curled up foetus-like - begin to unfold and link together in clumps. This is what happens in UHT [ultra heat-treated] milk, and is why it doesn't taste as good a fresh milk," says Dr Stapley.

    It is better to have the chilled milk massed at the bottom of the cup, awaiting the stream of hot tea. This allows the milk to cool the tea, rather than the tea ruinously raise the temperature of the milk.

    I agree totally with Gary - milk first every time.

    I've never understood how you can make a decent cuppa when there are two variables detemining the colour of the brew.

    If you add the milk first, you can adjust the tea strength by leaving the bag in for longer, rather than risk strong milky tea, or worst of all, dairy-free dishwater.

    Adding milk first stems from ye olde times, when poorer people albeit middle class people so still quiet well off, would have to put the milk in first as their china cups couldn't handle the heat of boiling water and would crack.

    Whereas the richer people who could afford good quality china cups could add water in first. Which I do believe is the way it should be.

    For those who insist that that adding milk before tea, i believe this is only socially acceptable if you've brewed the tea in a tea pot.

    However, sugar (thanks for spotting the mistake Tjobbe), has absolutely no place whatsoever in a proper cup tea.

    When making "in the cup", one should never squeeze the teabag. Don't force it! Rather, wait another minute before lifting it gently out. The best things come to those who wait and all that.

    Of course, having a teabag in a cup with water and milk at the same time is to be avoided anyway: milk is gloopier than water so the tea won't permeate through the liquid as well*, thus negatively affecting the quality of the beverage.

    * Probably.

    TEAPOT!!! (for 2-3mins) Best way... none of that t-bag taste!

    1) Cup
    2) Milk
    3) Tea
    4) Sugar (no more than 2 tsp)

    I always add milk first, you get just the right ratio of milk/water every time.
